For the Rolls
- 8 spring roll sheets
- 1 plantain banana fried in sticks
- 1 avocado cut in 16 pieces
- 1 carrot in sticks
- 1 cucumber in sticks
- 1 red bell pepper in sticks
- Lettuce
- Fresh mint
For the Peanut Dressing
- 60 ml of creamy peanut sauce
- 20 ml of honey
- 20 ml rice vinegar
- 10 ml siracha
- Juice of 1 lime
- 5 ml of lime zest
- 15 ml of gluten free soya sauce
- 60 ml of coconut milk
- 10 ml ginger
- 10 ml garlic
Rolls
Soak the rice sheet in warm water, place it on a cloth and put all the ingredients in the bottom of the sheet leaving a small space. Fold sides and roll tight till the end. Wrap each one in plastic wrap and place in the fridge. Makes 8 rolls.
Peanut Dressing
Place all the ingredients in a blender. If too thick add a bit of coconut milk. Put in the fridge until it is ready to serve. You can cut them in two and serve with dressing on the side.
Plantains look similar to bananas, but they are a vegetable and should be cooked. Plantains are nutritious and offer several health benefits in addition to their delicious flavor. Add plantains to stews or soups in place of potatoes to get the advantages they offer. They are rich in beta carotene, fiber and vitamin C.
